Cow ghee is actually a kind of clarified butter that has fewer dairy proteins as compared to regular butter. You can utilize it as a replacement for butter. Also called pure ghee or Desi ghee, it's a common ingredient added in Indian as well as the Middle Eastern cuisines. Cow ghee is excellent for sautéing and frying of food.

According to Ayurvedic science, there is a wide range of uses associated with Cow ghee that even make it a valuable element of ancient medicinal science.

2. How is it Made?

Traditionally, people prepare the Cow ghee by moderate heating of unsalted butter of cow's milk until the water content starts evaporating. Keep cooking till the milk solids at the surface of the pan become brown. Cow ghee gets a nutty and strong flavor due to these brown burnt milk residuals. After straining away the milk solids, only the liquid fat remains at the end that is the pure ghee. The fat solidifies after cooling down. About 25 to 30 liters of Cow milk give 1 liter of ghee.

Additionally, it offers an enticing aroma and a buttery flavor to the food.

This ghee can manage a maximum of 232 °C heat. It is less inclined to oxidation and nutrient consumption when exposed to heat.

4. Usage Policies and Typical Preparation

Typically, desi ghee preparation from cow milk goes through four steps:

  • Boiling
  • Churning
  • Simmering
  • Separating

The taste, color, and texture of ghee rely on the quality and duration of boiling the milk.

You can cover and store pure ghee on the kitchen shelf. No refrigeration is needed for the ghee as it solidifies at room temperature. You can use desi ghee for one year or more if there is no variation in appearance and smell. However, make sure that water does not go inside its container. Even a single drop of water can spoil the ghee as bacteria grows in it.

6. Usual Adulteration

Generally, desi ghee adulteration is possible by mixing it with vegetable oils, and animal body fats. The adulterated ghee can have adverse health effects as it destroys the nutrient value of pure ghee.
